Is there anyone else who is obsessed with raw vegan desserts that can be enjoyed as a breakfast? They are usually ready in 5 to 10 minutes, like this super yummy lemon & blueberry pudding. In addition, they are easy to digest and healthier than traditional desserts. If you like your breakfast to be fast, easy and low in sugar this pudding hits appetizingly all three marks.
Blueberry jam:
2 dl blueberries (or some other berries you prefer)
1 tbsp coconut palm sugar
2 tbsp chia seeds
Blend the berries with sugar. Mix in the chia seeds.
Lemon pudding:
1 1/2 oat milk/water
1 dl cashews
2 bananas
1/2 lemon
shredded peel of half lemon
Blend everything until smooth and mix the blueberry jam and the lemon pudding.
